(Almost) Chemical Free Brunch Casserole 

1/2 lb natural pork sausage 

2 slices sprouted grain bread

1 cup hand shredded gouda cheese

1 cup frozen chopped broccoli 

6 egg

2 cups milk *I used cream diluted with water

1/2 tsp salt

1/2 tsp dry mustard

Preheat oven to 350

Crumble sausage into skillet and cook until browned.

Spread 1/2 cubed bread into greased 11×7 inch baking dish; top with cooked sausage, cheese and broccoli.  *I ran out of olive oil so I used the oil from my jar of sun-dried tomatoes to grease the dish.

Whisk the 6 eggs, 2 cups milk or diluted cream mixture, 1/2 tsp salt and 1/2 tsp mustard until blended. I sprinkled a little pepper over the mixture in the baking pan before pouring the egg mixture on top. 

Bake 30-40 minutes or until set. Let stand 5 minutes before cutting into squares. Serve hot; can be topped with hot sauce if you like a little spice!
