Last weekend I was looking for something good to make for dinner that won’t wreck my waistline or my wallet. I found this super delish looking dish called “Spaghetti Squash with Bacon, Spinach, and Goat Cheese.” Uh yeah! Bacon and Goat Cheese – sign me up!
My only problem was the bacon since it is traditionally full of nitrates and preservatives. Lucky for me Aldi has uncured bacon with no added crap!

Also – I added a little bit of sundried tomatoes.
The warm, melty goat cheese and combination of bacon and fiber from the veggies are very satisfying and filling. As a bonus, this dish is super quick and in one pot for easy clean-up!
