Tonight’s Dinner: Slow Cooker Mediterranean Chicken

So after a long week of travel, it was three nights of eating out. We did the best we could to make healthy choices with things like salad and chili. However, Tim dropped my container of chili in the driveway, so I only got about half – that’s one way to diet I guess. The bad dog was happy. Tim did share his smoked turkey sandwich with me. Cause you know, hangry eyes. Let’s just say I was ready to get back into the kitchen!

Tonight I am making Slow Cooker Mediterranean Chicken courtesy of The Lady Behind the Curtain. The first time I cruised the ingredient list I thought there was no way it would taste good! I mean, white wine, red wine vinegar, brown sugar, and olives? That sounds strange enough, but then you see prunes. PRUNES??!! But then again I do not have food vision. I want to eat everything all the time, but I need a good ol recipe to help give me some guide posts. But, anything in the crock pot is a winner.

Oddly enough after a long day of simmering in a crock-pot, this mass of strange items turns into this rich, complex stew that is enough to dress up even cauliflower rice (which I will be making). It is a fantastic dish!

It took me about 20 minutes to drink bubbly throw everything together. Everything I used was free from chemicals including “natural flavors.” I substituted palm sugar for brown, and bubbly for white wine – probably committing some type of mortal kitchen sin. But hey, what the hell. You only live once.

Feast your eyes on this bowl of goodness!! I added red pepper flakes at the end to turn up the heat 🙂
