I don’t know if there is anything more comforting than a big bowl of tomato soup and a grilled cheese sandwich! This lovely soup created by Joyce LaFray in her cookbook, Tropic Cooking, combines ripe tomatoes, celery, and scallions with sweet and smokey Hungarian paprika, plenty of half-and-half and fresh dill!
Although this soup isn’t necessarily a “tropic” recipe, I did add some crushed red peppers for a kick – per the usual 🙂
For the grilled cheese I used the frozen spelt bread I made last week and a blend of Havarti and white cheddar. I also sprinkled on a smidge of this D.C. Gibbard’s Gourmet Habanero Seasoning I am obsessed with.
Everything you see here was made from simple and organic ingredients 🙂
