Baked Pasta & Greens

Tonight I am making baked pasta with greens. Instead of using a jarred marina sauce which usually contains chemicals, I made my own.

Marina Sauce:
mash 2 garlic cloves and sauté in oil
remove the garlic and stir in 15 oz can of tomato sauce and 10 oz diced tomatoes
sprinkle in around 1/2tsp of oregano and basil, add salt to taste
simmer for 10-15 minutes while you prepare the rest of the dish

Baked Shells and Greens:
Cook ~8oz of a medium pasta shape according to package directions, I am using Sfoglini
In a large skillet heat oil to medium, and cook 1 cup chopped onion
When the onion is almost done mince and add 2 cloves garlic, or if you are lazy like me push them through a garlic press
Pre-heat oven to 350 degrees
Add 1lb ground turkey and cook, until browned, I like the taste of beef, so I add beef bouillon when the turkey is cooked
Chop around 8-10oz of any color swiss chard and add to skillet, cook until wilted
Sprinkle with salt and pepper, stir in marinara and bring to a boil
Remove from heat and add 1/4cup chopped fresh basil, I used sage since I was out of basil
Stir the marina meat mixture together in a greased 13-9in baking dish
Top with ~8oz shredded mozzarella cheese, bake 5-7min until cheese is melted



This Belletti Prosecco has been my go-to cooking wine. And by cooking wine I mean the wine I put in my face while cooking ~$7 Aldi.
