Tonight I am cooking up some Pork Tetrazzini!
First I took about a pound of boneless pork and cut it into strips. I dredged them in whole wheat flour and browned the meat in about 2 tablespoons of oil, then set them aside.
To the pan drippings, I added another tablespoon of oil, 2 tablespoons of flour, a sprinkle of thyme, salt, and pepper. Then I added about a half cup of white wine (but you know this is a sparkling wine house!) and 1 cup of chicken broth.
While that was cooking down, I brought a stockpot of water to a boil and cooked 1/2lb of spaghetti (or whatever noodle) according to the package directions. Drain, rinse and pour into a greased casserole dish. Layer the meat and cover with the sauce. Cover with shredded parmesan cheese (or cheddar if you prefer) and bake at 350 for 45 minutes.
This had a comfort food feel to it – I guess because of the pasta and cheese. It was super delish!
